Garam Masala Hot Honey Chicken

INGREDIENTS

  • 2 pounds chicken tenders

  • 1 cup buttermilk

  • 1 tablespoon curry powder

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 2 cups panko bread crumbs

  • 2 tablespoons all purpose flour

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • Olive oil spray

Garam Masala Hot Honey

  • 4 tablespoons salted butter

  • 3 tablespoons honey

  • 1 - 3 teaspoons cayenne (adjust to desired spice level)

  • 1/2 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1 teaspoon garam masala

  • salt

DIRECTIONS

  1. To a large mixing bowl, add buttermilk, curry powder and salt. Mix. Add chicken to the mixture and toss to coat. Cover and refrigerate for 30 minutes or over night.

  2. Preheat oven to 400. Line a baking tray with foil, grease with oil.

  3. Working one by one, remove chicken tender from the bowl and coat in the panko mixture, pressing to make sure panko adheres. Place onto prepared baking tray and repeat with remaining chicken tenders.

  4. Lightly spray each tender with olive oil spray. Bake in the oven for 10 minutes, then flip and continuing cooking for an additional 10 minutes. If your tenders are extremely thick, they may need another 5 minutes. Internal temperature should be 165 degree F.

  5. While the chicken is baking, let’s make the hot honey. In a sauce pan, add butter, honey, cayenne, paprika, garlic powder, onion powder, garam masala and a pinch of salt. Let this mixture melt over medium heat. Once everything is melted and combined, take off heat and set aside.

  6. Once chicken is done, brush honey on the tenders and enjoy.

*Notes:

  • You can use different cuts of chicken, but will need to adjust cooking time accordingly.

  • If you’re not a fan of spice or want to serve to kids, you can omit the cayenne altogether from the honey mixture.

  • This chicken is delicious on some biscuits.
